Hello everyone! As promised, here is my FODMAP Friendly Shortbread recipe just in time for Christmas!
2 & a 1/3 cups gluten free flour
1 tsp baking powder
1 cup caster sugar
2/3 cup margarine or dairy free spread
1 tsp vanilla essence
Preheat oven to 190 degrees and line a baking tray with grease-proof paper.
Place flour, baking powder and sugar in a bowl.
Add margarine and vanilla essence and rub into dry mixture until combined.
Add egg and mix until fully combined.
Turn mixture out onto a floured bench and knead until mixture isn’t as sticky. You may need to add more flour.
Between two sheets of grease proof paper, roll out the dough until it is about 1/2 a centimetre thick.
Cut shapes, I used stars, and place onto the prepared baking tray. Repeat until all the mixture has been used.
Bake for 15 minutes or until the edges are lightly golden.
Enjoy! Makes approximately 20.
