Lactose Free Sticky Date Pudding Recipe

I hope you all had a fantastic weekend, mine certainly was! I’ve been super busy this weekend, especially because I spent basically half of Saturday sleeping in… Oops! I obviously needed the sleep! On Saturday night we had our family’s Christmas in July and I made this delicious variation of my Mum’s Sticky Date Pudding recipe by making it Lactose Free! It’s super easy and absolutely delicious so I thought I would share it with you.

 

Ingredients

 

Pudding

250 grams pitted dates

1 teaspoon bicarbonate soda

1 and a 1/2 cups boiling water

125 grams dairy free margarine

1 cup brown sugar

1 teaspoon vanilla extract

2 eggs

1 and 3/4 cups self raising flour

 

 

Butterscotch Sauce

1 cup brown sugar

300ml lactose free thickened cream

1 teaspoon vanilla extract

60 grams dairy free margarine

 

 

Method

Preheat oven to 180 degrees Celcius.

Grease a 22cm, round cake pan.

Place dates and bicarbonate soda into a bowl. Pour boiling water over the date mixture and allow to stand for 20 minutes.

Using an electric mixer, beat margarine, sugar and vanilla until pale and creamy.

Add eggs, 1 at a time, beating well after each addition.

Using a large, metal spoon, fold through date mixture and flour until well combined.

Spoon mixture into prepared cake pan.

Bake pudding for 35-40 minutes or until a skewer inserted into the centre comes out clean.

While pudding is baking, make the sauce.

Combine all sauce ingredients in a saucepan over medium heat.

Cook, stirring often until the sauce comes to the boil.

Reduce heat to medium-low and simmer for 2 minutes.

Pierce pudding all over with a fork.

Pour 3/4 of a cup of warm butterscotch sauce over warm pudding.

Stand for 10 minutes and serve with remaining sauce and vanilla ice-cream.

 

 

This recipe is super easy and quick to make and even my Aunties who make amazing Sticky Date Pudding, raved about mine! This dessert is perfect for get togethers and BBQ’s throughout Winter! Send me a picture or message if you make it yourself!
